Shrimp Bobo
Ingredients:
1 kg of shrimp, chopped 3 tomatoes, chopped 2 large onions, m 1 cup (tea), parsley, 1 cup (tea) of coconut milk, 2 tbsp (tablespoons) olive oil Salt to taste, 1 spoon (soup) of paprika, 1/2 kg of cassava clean
Preparation:
Place in a saucepan two spoonfuls (tablespoons) of olive oil, paprika, onions, tomatoes and salt to taste. Boil for 10 minutes. If necessary, add a little water, add the shrimp already clean and boil for 5 minutes. Cook the cassava (separately) until it is very soft, puree in blender and mix the shrimp stew, add the coconut milk and parsley, simmer and serve with white rice or mashed potatoes.
