Codfish Gomes de Sá


Ingredients:
800 g soaked cod, 1 kg large potatoes, cooked 3 eggs, 3 onions, 3 cloves garlic, 2 dl olive oil 1 bunch parsley, salt to taste, pepper, black olives

Preparation:
In advance blanch the slices of cod for 3 minutes, wipe the skin and bones and separate into flakes. Place in a container, cover with hot milk and let stand about 1 hour.
Meanwhile cook the potatoes whole with skin in water seasoned with salt, about 35 minutes depending on size. Do not cook the mais.Deixe cool slightly, peel and cut into small pieces.
Peel and cut onions in half moons and place them in a large pan and saute them in olive oil with garlic, until translucent. Preheat the oven to 200 º.
Add the potatoes and cod mixing together very gently not to break up, but be incorporated into the onion and cook without (hence the large pan). Grind the salt and season with pepper. Place a baking sheet and bake 15 minutes, to brown.
Remove from oven and garnish with boiled eggs, sliced ??or chopped, parsley and black olives. Serve hot.
